One ingredient: 100% organic green tea leaves (Camellia sinensis) from one family farm in Shizuoka, Japan. Single cultivar tencha, bead milled to ceremonial grade fineness, with no fillers and nothing else added. Net weight: 50g. Mesh: 3000 to 3500. Tea is a natural product, and the right fineness shifts a little with each season's leaf. The grind is adjusted to preserve the cultivar's flavour rather than chase a fixed number. Caffeine: medium, around 60 to 70mg per 2g serving. L-theanine: high. The 20 to 25 day shading window before harvest builds the amino acid concentration in the leaf, which gives ceremonial matcha its smooth, sweet character. Storage: cool, dark, sealed when not in use. Shelf life: 18 months unopened, 30 days after opening for best flavour.

Add 3 to 4 grams of matcha to your cup. About 1 to 2 teaspoons. The bigger the scoop, the stronger the brew.
Pour 40ml of hot water at 75°C. A little warmer is fine, up to 80°C, but never boiling.
Whisk in an M shape for about a minute, until a layer of froth forms.
Top with 150ml of milk and a touch of manuka honey. Stir gently and serve.
