The first thing you smell is the toasted rice. Nutty, warm, almost like rice cooked just past golden. The sencha comes through underneath, soft and clean, never sharp. There's a gentle sweetness that builds across the cup and a quiet umami that lingers after the last sip. Astringency stays low. Steam level sits soft. Take 1 tsp (2 g) of tea leaves into an infuser.
Pour 180 ml of 80°C hot water.
Steep for 1 - 3 minutes.
Filter the tea leaves and pour into a cup.
