We steam this leaf only briefly, and that is what you taste. The cup is clean and bright, with a fresh aroma that carries the high mountain air it was grown in. There is a light astringency, the kind that wakes the mouth up rather than drying it out, and a clear sweetness underneath. Take 1 tsp (2 g) of tea leaves into an infuser.
Pour 180 ml of 80℃ hot water.
Steep for 1 - 3 minutes.
Filter the tea leaves and pour into a cup.
