Matcha Pancakes

Matcha Pancakes

Start a great breakfast with some brunching munching Matcha Pancakes. Replace those butter pancakes with some matcha green tea style. Like your butter pancakes, they are stacking fluffy, buttery and moist for a gentle start to the morning. Mix in some chocolate chips or blue berries for an extra sweetness. Don’t forget the best bit, top it of with honey or syrup with a knob of butter! Happy Matcha!

Servings: 6 small pancakes

Ingredients
  • 1 cup of All purpose flour
  • 1 tablespoon of Teafy Matcha Powder
  • 2 teaspoons of baking powder
  • 1/4 teaspoon of salt
  • 1 tablespoon of milk
  • 1 egg
  • 2 tablespoon of olive oil
  • 2 teaspoons of vanilla extract
  • 1/4 cup of chocolate chips (optional)

Directions:
  1. Combine in a bowl, flour, matcha, baking powder and salt and whisk.
  2. Make a well in the centre of the mixture. In the well, add 1 cup plus 1 tablespoon of milk, egg, olive oil and vanilla extract.
  3. Whisk the batter until combined with small lumps of flour remaining.
  4. Add chocolate chips and stir again.
  5. Grease the pan lightly over medium-low heat. Transfer 2 – 3 spoons of the batter. Cook until small bubbles start to rise to the surface for about 1 minute.
  6. Flip and cook until the edges are slightly golden brown for another minute
  7. Serve with syrup or honey, topped with strawberries and cream.
